The day started off great - I made a sweet potato, beef, spinach hash with eggs over easy before a morning Bar Method class! When I got home to clean and prepare for the Seder, I had my leftover salad from Whole Foods and the remaining paleo pad thai from Friday night's dinner! I had to prep cucumbers topped with cashew cheese and dates stuffed with cashew cheese for appetizers so of course I had a few tastings (sadly, I probably at 10 stuffed dates all evening which is not the best thing but it was so delicious and a great distraction when everyone else was eating tiramasu)!
Passover Seder was a great way for our family to come over and see the apartment - they were so impressed with how quickly we were able to decorate and get everything put together - we only did move in 2 months ago!
The Seder meal was:

Cashew Cheese Stuffed Dates
Cucumber topped with Cashew Cheese

Paleo Moroccan meatballs
Spinach and Pine Nut Cake
Potato and carrot kuge
Matzo brei
Vegetable Muffins (made with almond flour)
Charoset
String Bean & Onion Vegetable Spread
Matzo
Dessert
Tiramisu
Red Velvet Macaroons
Strawberries
The meal was perfect and most of it (besides the matzoh dishes and dessert) were Whole30 approved so I was able to partake in the festivities. And when everyone had dessert, I had a few more dates, not because I needed them, but to keep me distracted from the delicious spongecake with coffee that everyone was indulging in!
It was really exciting to share our home with friends and family and to have my mom help me cook a fabulous dinner. Entertaining is hard and I give my mom a lot of credit for all of the dinners and holidays and birthdays that she hosts at her house! Next year though - Passover is at her house!
