Last night was my first time commuting home from work to the new apartment...good thing I didn't almost go back to Brooklyn. The bus stop is right outside of my office and drops me off 2 blocks from my apartment. It takes 15 minutes and I don't have to deal with the crowds of Grand Central and the 4/5/6 train. It is so pleasant and much more relaxing and it takes a lot less time!!! This morning I had breakfast at home with Ryan - we made egg white and oatmeal pancakes with a side of fresh grapefruit and coffee. It was so exciting to be able to eat breakfast with Ryan and not have to rush out of the house and then get on a packed subway and miserably commute to work!
Dinner last night was Eggs in Purgatory! It is a simple, one pot dish that can be made with any type of sauce or vegetables. I usually use onions, garlic and tomato sauce but last night we used leftover Turkey Bolognese so it was even easier because the sauce was already made! And the best part about the one pot is less clean-up! And there are so many variations to this recipe - use eggs, egg whites, throw some vegetables in, make it spicy, meat/meatless...the possibilities are endless. I served my eggs with a side of grilled broccoli, kale and spinach!
Eggs in Purgatory
Servings: 1
Weight Watchers Points: 5
2 Eggs
1/4 cup Fresh Direct Turkey Bolognese (or any tomato sauce - effects WW Points)
salt and pepper to taste
1. Heat small pan on medium and add sauce. Let is cook until warm. Spread across the entire bottom of the pan evenly.
2. Add eggs to pan making sure not to break the yolk!
3. Cover the pan and cook for 5 minutes or until desired consistency of yolk.
4. Remove and serve!
Dessert was an Arctic Zero parfait with Arctic Zero Chocolate Peanut Butter (1/2 cup - 1 WW Point) Nature's Path Hemp Plus Granola (1/3 cup: 3 WW Points) and fresh berries. This mornings breakfast looks almost the same!
Yesterdays wintry mix left everyone wet, cold and miserable. Today's temperatures dropped but at least its dry and sunny! I am so over the cold winter weather - it feels so long ago that it was Summer/Fall. Is it spring yet? I haven't been to Bar Method and I plan to go tomorrow morning and get back on my routine, but with the moving and all of the walking I did this past week and unpacking, I have more activity points and Fitbit steps then I usually do! And in the summer when I can walk to/from the office, my activity levels will soar! And of course citibike activity will help to.
Ever since the move, I have been a lot happier - I feel free and light. It's a fresh start in a new home with new possibilities and opportunities.
